Situated in a 400-year-old mansion in the Vilnius Old Town, and given a new lease of life in 2020, Senatorių pasažas houses a bakery, butchery, natural wine bar, street food stall, bookshop, farm and interior decor shops, as well as two renowned restaurants: Nineteen18 and 14Horses

Senatorių Pasažas was born out of sheer passion for sustainability. Every meal served here tells a story of local gastronomy, blending the finest flavors with modern culinary techniques and a commitment to responsible living. All the shops and restaurants at Senatorių Pasažas share a common passion for sustainability. At the heart of it all is Danish entrepreneur Niels Peter Pretzmann, who’s focusing on fixing issues like broken supply chain and supporting good farming practices - all while making sustainability easy and approachable

Ingredients that make a difference

From a simple morning bun at Grūdas bakery to a fine dining experience at Nineteen18, each dish is crafted using responsibly grown ingredients. Many of these ingredients come from their organic, regenerative farm, Farmers Circle, situated near Ukmergė. Red Brick, the farm restaurant, is proud to be the only certified organic restaurant in Lithuania, serving meals prepared exclusively with farm-grown meat and vegetables to offer a truly unique farm-to-table experience in the heart of nature.

Celebration of local, seasonal, and organic

Locally grown foods reflect the changing seasons and shape the menus, offering diners an ev-er-evolving culinary experience inspired by nearby gardens, fields, and forests. These dishes honor local traditions and time-tested techniques, thoughtfully adapted to meet modern standards. At Grūdas bakery, they keep things simple and local. Instead of using ingredients like cinnamon or lemon from far away, the bakers find creative local alternatives to make the baked goods feel right at home.

Waste prevention

Investing time in planning supplies and designing menus helps minimize food waste. The kitchen applies nose-to-tail and root-to-leaf principles to ensure that most parts of animals and vegetables are utilized. At 14Horses, the kitchen team repurposes unsold bread from Grūdas bakery to make miso paste and uses fish and animal bones to create stocks.

Repurposed elements that help to tell a story

Have you ever noticed the apron worn by a waiter at 14Horses restaurant? It’s crafted from old jeans, thanks to a collaboration with local artist Milda Paukštė, known for transforming textiles into art. The story continues in the restaurant interior - ceiling and partition elements are made of reclaimed wood, and the exposed walls reveal the passage of time.
Farmers Circle was named the best organic farm in Lithuania by Eko Agros and won the Best Regenerative Farm Award at the Baltic Sustainability Awards in Riga.

Efforts to promote local gastronomy, responsible farming, and a healthier food supply chain have gained international recognition. In 2024, Nineteen18 restaurant received a Michelin star for its gastronomy, while Red Brick restaurant earned Lithuania's only Michelin Green Star. 14Horses restaurant was awarded a Michelin Bib Gourmand for its refined food at a reasona-ble price.
