Take a leisurely hike and enjoy the panoramas of the city – the Old Town is surrounded by hills, so you'll get to see Vilnius from multiple different angles. There are indoor and outdoor ice-skating rinks, but if you want to skate on a lake, be sure that the ice is strong.
